Dr. Phoenyx Approved Recipe: Zucchini Fritters

Zucchini-Fritters

This is one of my fave low carb meals. I strongly advocate the low refined-carb lifestyle for people who are serious about losing weight and improving overall health. I explain how low carb is great for regulating key hormones, satisfies hunger longer than the typical Western diet, and how it also promotes healthy, sustained weight loss. Also, contrary to what some may think, low carb meals can be incredibly versatile, incredibly delicious and as you will soon see, very easy to make.

PREP TIME: 10 min.

COOK TIME: 15 min.

MAKES: 8 fritters

Ingredients:

  • 1 large zucchini
  • 1 green onion thinly sliced
  • 1/4 cup almond flour (or 1 cup panko bread crumbs)
  • 1/2 cup fresh grated Parmigiano-Reggiano
  • 1 egg
  • salt and pepper to taste
  • oil for frying (I used 2 tablespoons coconut oil. I regularly cook with coconut oil, and overall coconut oil is one of the healthiest oils, as well as one of the best oils for high heat cooking.)
  • Optional: 1 teaspoon lemon juice

Preparation

  1. Grate zucchini with a medium sized grater.
  2. Place shredded zucchini in a clean dishtowel and squeeze to get as much liquid out of it as possible. (It doesn’t have to be perfect but do try to get as much as you can)
  3. Once squeezed place back in bowl and add salt to taste. Then add beaten egg, thinly sliced green onions, almond flour, parmigiana reggiano, and fresh ground black pepper and mix thoroughly.(this is where you would add the lemon juice if you choose to use it)
  4. Heat 2 tablespoons of your cooking oil over medium heat and wait for that pan to get hot.
  5. Once oil is shimmering add large spoonfuls of wet zucchini mixture in hot oil and fry until golden brown on each side.
  6. Place on platter lined with paper towels to soak up any grease from fritter, and serve with a side of creamy low carb dipping sauce like sour cream or ranch dressing.
