Paleo Chocolate Chip Cookies

Maybe you’re just like me, and every now and again you’ll get this ridiculous jones for chocolate chip cookies! However as we all know, chocolate chip cookies aren’t the healthiest of foods. Fortunately, if you take the time to do a little recipe hunting (thank God for Google!) you can find tons of chocolate chip cookie recipe alternatives that are very easy to tweak, and that offer a healthier spin on the original chocolate chip recipe since they don’t call for ingredients like flour and refined white sugar. Case in point, today I’m making these Paleo-style Chocolate Chip Cookies that taste awesome and also contains healthier ingredients so you can enjoy this “cheat food” without too much guilt.

And of course, if you just can’t help but feel guilty after partaking in these chocolate goodies, you can always follow up this treat with a workout to burn off those extra cookie calories! *wink*

INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
  2. In the bowl of a food processor, add in almond butter, coconut sugar and coconut oil; process until it comes together, about 1 minute. Add in eggs and process again. The dough will probably seize up at this point, but don’t worry that’s okay.
  3. Next, add in coconut flour, baking soda and salt; process again until a dough forms. Gently fold in chocolate chips.
  4. Use a cookie scoop to drop dough onto prepared cookie sheet. You can flatten dough with the palm of your hand if you’d like to have cookies like mine in the photo, or if you prefer, you can leave the dough as is and cookies will be a bit puffier.
  5. Bake for 8-10 minutes or until cookies turn slightly golden brown around the edges. Allow them to cool on cookie sheet for at least 5 minutes, then transfer to a wire rack to finish cooling. Repeat with remaining dough. Makes around 20 cookies.
