Here’s a little secret: Healthy eating doesn’t have to suck.
In fact, healthy eating can be downright awesome when you take the time to learn recipes that incorporate lots of nutritious foods, spices, herbs and flavors. Case in point, one of my favorite “fast foods”, pico de gallo!
Just this evening I shared a very enticing pic of freshly made pico de gallo on my Instagram and needless to say, for those who’ve never tried pico de gallo, you’re in for a real treat – especially if you like flavorful, refreshing foods with hints of lime that just so happen to be very healthy too. Plus, for anyone with special dietary needs, pico de gallo is paleo-friendly and vegetarian/vegan-friendly.
So if you’re on a weight loss journey or just looking to add more “waist-friendly” foods to your recipe box, definitely check out this recipe. It’s super easy to make, and overall pico de gallo is a very tasty, very filing, low-calorie, and nutrient-packed food that makes a great addition to countless other dishes like eggs, grilled fish, beans, tacos, cucumber salad, grilled cheese, etc… Bottom line, a lil’ pico makes everything taste better. Pico de Gallo
Makes: 2 cups
Time: 15 minutes
- 2 medium tomatoes, finely diced (yields 1 1/2 cups)
- 1/3 cup chopped cilantro
- 1/4 cup finely chopped onion
- 1 small fresh jalapeño or serrano chile, finely chopped, including seeds, or more to taste
- 1-2 tablespoon freshly squeezed lime juice, or more to taste
- Salt, to taste
Mix all the ingredients together in a bowl. Season to taste with additional chile, lime juice, and salt. Let refrigerate for 1-2 hours, or until chilled. Serve while chilled.
